The bees have been busy producing honey this summe The bees have been busy producing honey this summer, due to the lovely weather we have had this year. 

The honey is predominantly heather honey, with touch of summer blossom.  It has that lovely vanilla taste that comes with the smell of heather. 
The heather is mainly purple ling that is situated on the Spey Side way by the hotel and then Gheal Carn Mhor which, over looks Loch Alvie. 

To harvest the honey, the caps on the honey
 frame are removed and then the frames are spun (by hand). The centrifugal force extracts the honey. Heather honey is thicker and usually gets pressed out, but this year I tried to preserve the wax for the bees, so I have spun rather than pressed. This does mean that the majority of the honey was returned to the bees! I always leave them with enough stores for winter and this will have added to them greatly.
